Prep Time: 15 minutes
Cook Time: at least an hour to pickle
FOR VEGETABLES, COMBINE:
2 cups English cucumbers, ribboned
2 cups daikon radishes, ribboned
2 cups carrots, ribboned
FOR THE PICKLING, WHISK:
1 jar of HEAVENLY PEPPER JELLY, warmed slightly
1/2 cup of sake
1 cup apple cider vinegar
1 tablespoon of salt
Fill empty jars with vegetables. Warm jelly to make mixing easier. This can be done by putting open jar in microwave for about 20 seconds, or warming in a sauce pan over the stove. Whisk together pickling ingredients in a small bowl. Pour over vegetables. Seal lid and allow vegetables to pickle for at least an hour before serving.
I made some with Purgatory and the heat intensified in the pickling process, so I recommend using Heaven if you are serving company. If not the spice was awesome! Get a fork and eat them right out of the jar!
